Hi, I’m Lauren. I’m a Registered Clinical Nutritionist with over 5 years of experience within the healthcare industry. I’m dedicated to helping people optimise their health, wellbeing and lives by the philosophy of treating the whole person through an evidence-based and holistic approach.

My area of speciality includes but is not limited to chronic inflammation, autoimmune, mental health and digestive disorders. In addition to my Bachelor’s degree in Health Science (Nutrition and Dietetic Medicine), I plan to further my education with a Masters of Public Health to expand my knowledge and ability to empower people to improve their health.

I live in Melbourne’s east with my partner and energetic German shepherd, where we love to cook and go for walks in nature.

Oat chocolate chip cookies

These cookies are crispy on the outside and chewy on the inside. They’re full of fibre and protein, and perfect for when you’re craving something sweet.

Recipe makes 10 cookies.

Ingredients:

  • 1 egg
  • 1/2 cup of smooth peanut butter
  • 1 teaspoon of vanilla extract
  • 1/2 cup of coconut sugar
  • 1/2 cup of rolled oats
  • 1/2 tsp of baking powder
  • 1/4 cup of walnuts chopped
  • 1/4 cup of choc chips
  • Pinch of salt

Method:

  1. Preheat oven to 190 degrees.
  2. Lightly beat egg, stir in the peanut butter and vanilla extract.
  3. Blend 1/4 cup of the oats in a blender into a fine flour.
  4. Add blended oats, sugar, baking powder and salt.
  5. Stir in the remaining rolled oats, walnuts and choc chips.
  6. Place in the fridge for 30 minutes.
  7. Roll mixture into small balls and place onto tray lined with baking paper, then slightly flattened with fork.
  8. Bake for 10-15 mins until golden brown.
  9. Remove from oven and allow to cool.
  10. Enjoy!
