Chicken Cucumber Appetizer

If you are looking for a fresh, light and tasty appetizer, then look no further than Kitty’s amazing Chicken Cucumber dish – it’s sure to become a favourite!

Time: About 45 mins. Serving: 4-6 people

Ingredients:

  • ~400g (before cooking) chicken breast
  • 1 cucumber
  • 4 tbsp chinese black vinegar
  • 1 tbsp soy sauce
  • 2 tsp chili oil
  • 2 tsp minced garlic
  • 2 tsp chicken powder
  • 2 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp toasted sesame seeds

Method:

  1. Boil water in a saucepan, put chicken breast in, boil for 5 mins and turn to low heat to simmer for a 15 mins.
  2. Turn off the heat, put the lid on the saucepan, let the chicken breast sit for another 15 mins.
  3. In the meantime, grate the cucumber using the large holes on the box grater into a bowl.
  4. Remove the chicken breast from the water, let it cool down.
  5. Shred the chicken with your hands, fork, or mixer.
  6. Mix chinese black vinegar, soy sauce, chili oil, garlic, chicken powder, sesame oil and sugar together in a bowl for the sauce.
  7. Mix the chicken, cucumber and the sauce together, by hand or fork.
  8. Sprinkle toasted sesame seed on top, ready to serve.
