Banana oat pancakes

A twist on a classic pancake, these banana oat pancakes are packed with fruit and wholegrains.

We tied this recipe in with our MSK News issue #30, focusing on gout.

Melissa said “for those with gout, following a balanced, wholefood diet is important, not only for gout management but overall health as well”.

But we know these pancakes are sure to be a favourite for everyone.

Serves 2
Prep and cook time: 15 mins

Ingredients:

  • 1 large banana or 2 small bananas
  • 1 cup rolled oats
  • 1 egg
  • ¼ cup milk of your choice
  • ½ teaspoon baking powder

Method:

  1. Blend the oats in a blender until it is almost a flour consistency.
  2. Add the remaining ingredients to the blender and blend until smooth (roughly 2 minutes).
  3. Cook spoonfuls of the batter in a non-stick frying pan set over medium-high heat until golden brown on both sides and cooked through.
  4. Serve with your favourite toppings. These pancakes go great with yoghurt and fruit!
